Potatoes provide a great source of energy through carbohydrates. Your body needs 60% carbohydrates a day to provide it with energy. Potatoes also provide the body with protein.. Protein is essential in muscle growth and repair.&lt;br /&gt;&lt;br /&gt;GREEN POTATO SALAD&lt;br /&gt;&lt;br /&gt;6 (about 3 lb) large potatoes,&lt;br /&gt;&lt;br /&gt;boiled in jackets, peeled, cut into 4-inch cubes&lt;br /&gt;&lt;br /&gt;1C celery, chopped&lt;br /&gt;&lt;br /&gt;½ C green onion, sliced&lt;br /&gt;&lt;br /&gt;2 tbsp Parsley, chopped&lt;br /&gt;&lt;br /&gt;1C lowfat cottage cheese&lt;br /&gt;&lt;br /&gt;¾ C skim milk&lt;br /&gt;&lt;br /&gt;3 Tbsp lemon juice&lt;br /&gt;&lt;br /&gt;2 Tbsp cider vinegar&lt;br /&gt;&lt;br /&gt;½ tsp celery seed&lt;br /&gt;&lt;br /&gt;½ tsp dill weed&lt;br /&gt;&lt;br /&gt;½ tsp dry mustard&lt;br /&gt;&lt;br /&gt;½ tsp white pepper&lt;br /&gt;&lt;br /&gt;In large bowl, place potatoes, celery green onion, and parsley. Meanwhile, in blender or food processor, blend cottage cheese, milk, lemon juice, vinegar, celery see, dill weed, dry mustard, and white pepper until smooth. Chill for 1 hour.&lt;br /&gt;Pour chilled cottage cheese mixture over vegetables and mix well. Chill at least 30 minutes before serving.&lt;br /&gt;&lt;br /&gt;Yield: 10 servings&lt;br /&gt;&lt;br /&gt;Serving size: 1 cup&lt;br /&gt;&lt;br /&gt;Each serving provides:&lt;br /&gt;&lt;br /&gt;Calories: 145&lt;br /&gt;&lt;br /&gt;Total fat: 1g&lt;br /&gt;&lt;br /&gt;Saturated fat: less than 1g&lt;br /&gt;&lt;br /&gt;Cholesterol: 2mg&lt;br /&gt;&lt;br /&gt;Sodium:122 mg&lt;br /&gt;&lt;br /&gt;Total Fiber; 3g&lt;br /&gt;&lt;br /&gt;Protein: 6 g&lt;br /&gt;&lt;br /&gt;Carbohydrates: 29g&lt;br /&gt;&lt;br /&gt;Potassium: 543 mg&lt;br /&gt;&lt;br /&gt;NEW POTATO SALAD&lt;br /&gt;&lt;br /&gt;(5C) small new potatoes&lt;br /&gt;&lt;br /&gt;2 Tbsp Olive oil&lt;br /&gt;&lt;br /&gt;¼ C green onions&lt;br /&gt;&lt;br /&gt;¼ tsp Black pepper&lt;br /&gt;&lt;br /&gt;1 tsp dill weed, dried&lt;br /&gt;&lt;br /&gt;Thoroughly clean potatoes with vegetable brush and water. Boil potatoes for 20 minutes or until tender. Drain and cool potatoes for 20 minutes. Cut potatoes into fourths and mix with olive oil, onions, and spices.
